Slow Candying Process: Sabaton uses a traditional slow osmosis method (confisage lent). Fresh orange peels are steeped over extended periods in sugar syrup at low temperatures to ensure complete saturation without compromising the peel's natural essential oils.
Textural Integrity: The process preserves a firm bite, balanced moisture retention, and rich translucency without turning mushy or crystallization during baking.
