Rarely grown any longer, this heritage grain has a distinct flavor all its own. With a beautiful reddish, brown color and a nutty, slightly toasted flavor, these wheat berries are great used like you would rice or any other whole grain in soups, salads, side dishes or as a base for stir-fry. They also make for a wonderful breakfast cereal.
Red Fife has deeper, more complex flavors than common hard red winter wheats, and breads made with it bake up moister, with a cohesive crumb. Because Red Fife has a high gluten content , it can be used by itself or mixed with low gluten flours such as rye or spelt.
