Tara gum, also known as Peruvian carob gum, is a natural food additive made from the ground endosperm of the seeds of the tara tree. It is a white to yellow powder that is soluble in hot water and partially soluble in cold water. Tara gum is mainly composed of high molecular weight polysaccharides, namely galactomannan. It is used as a thickener, stabilizer and gelling agent in food.
It's easy to use: dosage is 1–2 grams per 100 ml of liquid, depending on the desired consistency. It can be used in:
vegan custards
spoon desserts
sauces, dressings, and condiments
gluten-free or egg-free doughs
Unlike other thickeners, tara does not alter the final flavor of the preparation and ensures a velvety, stable, and digestible texture.
